Ingredients 

Main Ingredients

  • 4 medium zucchinis spiralized into zoodles
  • 1 cup cherry tomatoes halved
  • 1 cup bell peppers chopped
  • 1 cup red onion sliced
  • 2 cloves garlic minced
  • 2 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the zoodles, cherry tomatoes, bell peppers, red onion, and garlic.
  3. Drizzle with olive oil and sprinkle with dried oregano, dried basil, salt, and pepper. Toss to coat evenly.
  4. Transfer the mixture to a baking dish and spread it out evenly.
  5. Bake in the preheated oven for 30 minutes, or until the vegetables are tender and slightly golden.
  6. Remove from the oven and let it cool for a few minutes before serving.
