Ingredients 

Main Ingredients

  • 2 medium zucchinis grated
  • 2 medium carrots grated
  • ½ cup all-purpose flour
  • ¼ cup nutritional yeast
  • ¼ cup chopped green onions
  • 1 clove garlic minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 2 tablespoon olive oil for frying

Instructions 

  1. Grate the zucchinis and carrots. Place them in a clean kitchen towel and squeeze out excess moisture.
  2. In a large bowl, combine the grated vegetables, flour, nutritional yeast, green onions, garlic, salt, pepper, and paprika. Mix well.
  3. Heat olive oil in a large skillet over medium heat.
  4. Scoop about 2 tablespoons of the mixture for each fritter and place it in the skillet. Flatten slightly with a spatula.
  5. Cook for 3-4 minutes on each side, until golden brown and crispy.
  6. Remove from skillet and drain on paper towels. Serve warm.
