Instructions
Grate the zucchinis and carrots. Place them in a clean kitchen towel and squeeze out excess moisture.
In a large bowl, combine the grated vegetables, flour, nutritional yeast, green onions, garlic, salt, pepper, and paprika. Mix well.
Heat olive oil in a large skillet over medium heat.
Scoop about 2 tablespoons of the mixture for each fritter and place it in the skillet. Flatten slightly with a spatula.
Cook for 3-4 minutes on each side, until golden brown and crispy.
Remove from skillet and drain on paper towels. Serve warm.
