Ingredients 

Main Ingredients

  • 4 medium zucchinis
  • 1 cup cooked quinoa
  • 0.5 cup diced tomatoes
  • 0.25 cup chopped red onion
  • 0.25 cup corn kernels
  • 0.25 cup black beans
  • 2 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Cut zucchinis in half lengthwise and scoop out the centers.
  3. In a bowl, mix quinoa, tomatoes, red onion, corn, black beans, olive oil, garlic powder, cumin, salt, and pepper.
  4. Stuff zucchinis with the mixture.
  5. Place stuffed zucchinis on a baking sheet and bake for 25 minutes.
  6. Garnish with fresh cilantro before serving.
