Ingredients

  • 1 ½ cups grated zucchini
  • 1 ½ cups all-purpose flour
  • ½ cup sugar
  • ½ cup brown sugar
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, whisk together the flour, sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Add the grated zucchini, vegetable oil, and vanilla extract. Stir until just combined.
  4. Pour the batter into the prepared loaf pan and spread it out evenly.
  5. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
