Ingredients 

Main Ingredients

  • 2 medium zucchinis, grated
  • 1 cup corn kernels (fresh or frozen)
  • ½ cup all-purpose flour
  • ¼ cup cornmeal
  • ¼ cup chopped green onions
  • ¼ cup chopped fresh cilantro
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup water
  • 2 tablespoon olive oil (for frying)

Instructions 

  1. Grate the zucchinis and squeeze out excess moisture.
  2. In a large bowl, combine grated zucchini, corn, flour, cornmeal, green onions, cilantro, baking powder, salt, and pepper.
  3. Add water and mix until combined.
  4. Heat olive oil in a skillet over medium heat.
  5. Scoop ¼ cup of the mixture and flatten it into a patty in the skillet.
  6. Cook for 3-4 minutes on each side until golden brown.
  7. Repeat with remaining mixture.
  8. Serve warm.
