Zucchini Corn Fritters Recipe

Main Ingredients
- 2 medium zucchinis, grated
- 1 cup corn kernels (fresh or frozen)
- ½ cup all-purpose flour
- ¼ cup cornmeal
- ¼ cup chopped green onions
- ¼ cup chopped fresh cilantro
- ½ teaspoon baking powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup water
- 2 tablespoon olive oil (for frying)
Grate the zucchinis and squeeze out excess moisture.
In a large bowl, combine grated zucchini, corn, flour, cornmeal, green onions, cilantro, baking powder, salt, and pepper.
Add water and mix until combined.
Heat olive oil in a skillet over medium heat.
Scoop ¼ cup of the mixture and flatten it into a patty in the skillet.
Cook for 3-4 minutes on each side until golden brown.
Repeat with remaining mixture.
Serve warm.
