Ingredients

  • 2 medium zucchinis grated
  • 1 small onion finely chopped
  • 0.5 cup all-purpose flour
  • 0.25 cup nutritional yeast
  • 0.25 cup fresh parsley chopped
  • 1 clove garlic minced
  • Salt and pepper to taste
  • Olive oil for frying

Instructions 

  1. Grate the zucchinis and squeeze out excess moisture.
  2. In a bowl, combine grated zucchini, onion, flour, nutritional yeast, parsley, garlic, salt, and pepper.
  3. Heat olive oil in a pan over medium heat.
  4. Scoop spoonfuls of the mixture into the pan and flatten slightly.
  5. Cook for 3-4 minutes on each side until golden brown.
  6. Drain on paper towels and serve warm.
