Ingredients 

Main Ingredients

  • 3 medium zucchinis sliced lengthwise
  • 2 cups marinara sauce
  • 1 cup vegan ricotta cheese
  • 1 cup vegan mozzarella cheese shredded
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Slice zucchinis lengthwise into thin strips.
  3. In a pan, heat olive oil over medium heat. Add minced garlic and cook until fragrant.
  4. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  5. Layer zucchini slices over the sauce, then spread a layer of vegan ricotta cheese.
  6. Sprinkle some dried basil and oregano, then add a layer of marinara sauce.
  7. Repeat the layers until all ingredients are used, finishing with a layer of marinara sauce and shredded vegan mozzarella cheese on top.
  8. Bake in the preheated oven for 40 minutes, or until the top is golden and bubbly.
  9. Let it cool for a few minutes before serving.
