Ingredients 

Main Ingredients

  • 2 large Zucchini spiralized into noodles
  • 1 cup Cherry Tomatoes halved

Pesto Ingredients

  • 2 cups Fresh Basil Leaves
  • ½ cup Olive Oil
  • ¼ cup Pine Nuts toasted
  • 2 cloves Garlic minced
  • 1 tablespoon Lemon Juice freshly squeezed
  • to taste Salt and Pepper

Instructions 

  1. 1. Spiralize the zucchini into noodles using a spiralizer.
  2. 2. In a blender, combine basil leaves, olive oil, pine nuts, garlic, lemon juice, salt, and pepper. Blend until smooth to make the pesto.
  3. 3. In a pan over medium heat, lightly sauté the zucchini noodles for 2-3 minutes until just tender.
  4. 4. Add the cherry tomatoes to the pan and cook for another 2 minutes.
  5. 5. Remove from heat and toss the noodles and tomatoes with the pesto sauce.
  6. 6. Serve immediately and enjoy!
