Ingredients 

Main Ingredients

  • 2 large zucchinis spiralized into noodles
  • 1 cup basil leaves
  • ¼ cup pine nuts toasted
  • 2 cloves garlic
  • ¼ cup olive oil
  • 2 tablespoon nutritional yeast
  • 1 tablespoon lemon juice freshly squeezed
  • to taste salt and pepper

Instructions 

  1. 1. Spiralize the zucchinis into noodles using a spiralizer.
  2. 2. In a blender, combine basil leaves, toasted pine nuts, garlic, olive oil, nutritional yeast, lemon juice, salt, and pepper. Blend until smooth to make the pesto sauce.
  3. 3. In a pan over medium heat, lightly sauté the zucchini noodles for 2-3 minutes until just tender.
  4. 4. Toss the zucchini noodles with the pesto sauce until well coated.
  5. 5. Serve immediately and enjoy!
