  • 2 large zucchinis spiralized into noodles
  • 1 ripe avocado
  • ¼ cup fresh basil leaves
  • 1 clove garlic minced
  • 2 tablespoon lemon juice freshly squeezed
  • 2 tablespoon olive oil
  • ¼ cup pine nuts toasted
  • to taste salt and pepper

Instructions 

  1. 1. Spiralize the zucchinis into noodles using a spiralizer.
  2. 2. In a blender, combine the avocado, basil leaves, garlic, lemon juice, olive oil, and pine nuts. Blend until smooth.
  3. 3. Season the avocado pesto with salt and pepper to taste.
  4. 4. Toss the zucchini noodles with the avocado pesto until well coated.
  5. 5. Serve immediately and enjoy!
