Zucchini Relish Recipe
A tangy and sweet relish made from fresh zucchini, perfect for topping burgers or serving as a condiment.

- 4 cups Zucchini, finely chopped
- 1 cup Onion, finely chopped
- 1 cup Red bell pepper, finely chopped
- 2 tablespoon Salt
- 2 cups Sugar
- 2 cups Apple cider vinegar
- 1 teaspoon Celery seed
- 1 teaspoon Mustard seed
1. Combine zucchini, onion, and red bell pepper in a large bowl. Sprinkle with salt and let sit for 2 hours.
2. Drain and rinse the vegetables well. Squeeze out excess moisture.
3. In a large pot, combine sugar, apple cider vinegar, celery seed, and mustard seed. Bring to a boil.
4. Add the drained vegetables to the pot. Return to a boil, then reduce heat and simmer for 30 minutes.
5. Pack hot relish into sterilized jars, leaving ½ inch headspace. Seal and process in a boiling water bath for 10 minutes.
