Instructions
1. Preheat your oven to 375°F (190°C).
2. Slice the zucchinis thinly lengthwise using a mandoline slicer.
3. In a bowl, mix the vegan ricotta, nutritional yeast, garlic powder, dried basil, salt, and pepper.
4. Spread a thin layer of the ricotta mixture on each zucchini slice and roll them up.
5. Pour a layer of marinara sauce into a baking dish and place the roll-ups on top.
6. Bake for 15 minutes or until the zucchini is tender.
7. Serve warm and enjoy!
