  • 2 large zucchinis sliced thinly lengthwise
  • 1 cup vegan ricotta
  • 1 tablespoon nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1 cup marinara sauce
  • to taste salt and pepper

Instructions 

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. Slice the zucchinis thinly lengthwise using a mandoline slicer.
  3. 3. In a bowl, mix the vegan ricotta, nutritional yeast, garlic powder, dried basil, salt, and pepper.
  4. 4. Spread a thin layer of the ricotta mixture on each zucchini slice and roll them up.
  5. 5. Pour a layer of marinara sauce into a baking dish and place the roll-ups on top.
  6. 6. Bake for 15 minutes or until the zucchini is tender.
  7. 7. Serve warm and enjoy!
