1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, and sauté until the onion is translucent.
2. Add the vegetable broth, chopped kale, and diced potatoes to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 20 minutes.
3. Stir in the coconut milk, salt, and black pepper. Simmer for another 5 minutes.
