Ingredients 

Main Ingredients

  • 12 oz Fettuccine pasta or any pasta of choice
  • 1 cup Cashews soaked in hot water for 15 minutes
  • 2 cups Vegetable broth
  • 3 cloves Garlic minced
  • 1 tablespoon Nutritional yeast
  • 2 tablespoon Lemon juice freshly squeezed
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black pepper freshly ground

Instructions 

  1. 1. Cook the pasta according to the package instructions. Drain and set aside.
  2. 2. In a blender, combine the soaked cashews, vegetable broth, minced garlic, nutritional yeast, lemon juice, salt, and black pepper. Blend until smooth and creamy.
  3. 3. Pour the blended sauce into a saucepan and heat over medium heat until warmed through, stirring occasionally.
  4. 4. Add the cooked pasta to the saucepan and toss to coat the pasta evenly with the sauce.
  5. 5. Serve immediately, garnished with fresh herbs if desired.
