Ingredients 

Main Ingredients

  • 6 cups potatoes, peeled and diced
  • 1 cup vegan mayonnaise
  • 2 tablespoon apple cider vinegar
  • 2 tablespoon sugar
  • 1 tablespoon mustard
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 cup celery, chopped
  • 1 cup onion, finely chopped

Instructions 

  1. 1. Boil the potatoes in a large pot until tender, about 15 minutes. Drain and let cool.
  2. 2. In a mixing bowl, combine vegan mayonnaise, apple cider vinegar, sugar, mustard, salt, and pepper.
  3. 3. Add the cooled potatoes, celery, and onion to the bowl. Mix well to coat everything evenly.
  4. 4. Chill in the refrigerator for at least 1 hour before serving.
