Asian Vegan Tofu Noodles Recipe

Ingredients 

Main Ingredients

  • 200 g firm tofu cubed
  • 200 g rice noodles
  • 1 cup mixed vegetables carrots, bell peppers, snap peas
  • 2 tablespoon soy sauce low sodium
  • 1 tablespoon sesame oil
  • 1 tablespoon hoisin sauce
  • 2 cloves garlic minced
  • 1 teaspoon ginger minced
  • 2 tablespoon green onions chopped
  • 1 tablespoon sesame seeds for garnish

Instructions 

  1. 1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. 2. In a wok, heat the sesame oil over medium heat. Add the minced garlic and ginger, and sauté for 1-2 minutes until fragrant.
  3. 3. Add the cubed tofu to the wok and cook until golden brown on all sides, about 5-7 minutes.
  4. 4. Add the mixed vegetables to the wok and stir-fry for another 3-4 minutes until they are tender-crisp.
  5. 5. Pour in the soy sauce and hoisin sauce, and toss everything together to coat evenly.
  6. 6. Add the cooked rice noodles to the wok and toss to combine with the tofu and vegetables.
  7. 7. Garnish with chopped green onions and sesame seeds before serving.
