  • 2 slices Whole grain bread
  • 1 Avocado ripe
  • 2 Eggs poached
  • 1 pinch Salt to taste
  • 1 pinch Black pepper to taste
  • 1 tablespoon Lemon juice freshly squeezed

Instructions 

  1. 1. Toast the bread slices until golden brown.
  2. 2. While the bread is toasting, mash the avocado in a bowl with a fork. Add lemon juice, salt, and pepper to taste.
  3. 3. Poach the eggs in simmering water for about 3-4 minutes until the whites are set but the yolks are still runny.
  4. 4. Spread the mashed avocado evenly on the toasted bread slices.
  5. 5. Place a poached egg on top of each avocado toast.
  6. 6. Season with additional salt and pepper if desired. Serve immediately.
