Ingredients 

Main Ingredients

  • 8 oz pasta your choice
  • 1 cup cherry tomatoes halved
  • 1 cup arugula
  • 0.5 cup vegan bacon bits
  • 0.25 cup red onion finely chopped
  • 0.25 cup vegan mayo
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions 

  1. Cook pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine pasta, cherry tomatoes, arugula, vegan bacon bits, and red onion.
  3. In a small bowl, whisk together vegan mayo, apple cider vinegar, salt, and pepper.
  4. Pour dressing over pasta mixture and toss to combine.
  5. Chill in the fridge for at least 30 minutes before serving.
