- 2 cups Rolled Oats
- 1 cup Blueberries fresh or frozen
- ½ cup Maple Syrup
- ¼ cup Coconut Oil melted
- 1 tablespoon Lemon Zest
- 1 teaspoon Baking Powder
- 1 teaspoon Vanilla Extract
- ¼ teaspoon Salt
Preheat your oven to 350°F (175°C). Grease a baking dish.
In a mixing bowl, combine oats, baking powder, and salt.
Stir in the maple syrup, melted coconut oil, lemon zest, and vanilla extract until well combined.
Gently fold in the blueberries.
Press the mixture into the prepared baking dish.
Bake for 30 minutes or until golden brown.
Let cool before cutting into bars.
