  • 4 cups Broccoli florets chopped
  • ½ cup Dried cranberries
  • ¼ cup Sunflower seeds
  • ¼ cup Red onion finely chopped
  • ¼ cup Vegan mayonnaise
  • 1 tablespoon Apple cider vinegar
  • 1 tablespoon Maple syrup
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper

Instructions 

  1. In a large mixing bowl, combine the chopped broccoli, dried cranberries, sunflower seeds, and red onion.
  2. In a small bowl, whisk together the vegan mayonnaise, apple cider vinegar, maple syrup, salt, and black pepper.
  3. Pour the dressing over the broccoli mixture and toss to coat evenly.
  4. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
