Butternut Squash Apple Soup

Main Ingredients
- 1 large butternut squash peeled, seeded, and cubed
- 2 apples peeled, cored, and chopped
- 1 medium onion chopped
- 2 cloves garlic minced
- 4 cups vegetable broth
- 1 teaspoon salt or to taste
- ½ teaspoon black pepper or to taste
- ½ teaspoon ground cinnamon
1. In a large pot, heat a bit of oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
2. Add the cubed butternut squash and chopped apples to the pot. Stir to combine.
3. Pour in the vegetable broth, and bring the mixture to a boil. Reduce the heat and let it simmer for about 30 minutes, or until the squash and apples are tender.
4. Use a blender to puree the soup until smooth. You may need to do this in batches.
5. Return the pureed soup to the pot. Season with salt, black pepper, and ground cinnamon. Stir well and let it heat through for another 5 minutes.
6. Serve hot and enjoy!
