Carrot Raisin Salad

Main Ingredients
- 4 cups carrots, grated
- 1 cup raisins
- ¼ cup vegan mayonnaise
- 1 tablespoon lemon juice
- ¼ teaspoon salt
- ¼ teaspoon black pepper
In a large mixing bowl, combine grated carrots and raisins.
In a small bowl, whisk together vegan mayonnaise, lemon juice, salt, and black pepper.
Pour the dressing over the carrot and raisin mixture and toss to combine.
Chill in the refrigerator for at least 30 minutes before serving.
