Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the flour, baking powder, and salt.
Add the cold, cubed vegan butter to the dry ingredients. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
Stir in the shredded vegan cheddar and chopped chives.
In a small bowl, mix the almond milk and apple cider vinegar. Let it sit for a minute to curdle.
Pour the almond milk mixture into the dry ingredients. Stir until just combined.
Turn the dough out onto a lightly floured surface. Pat it into a circle about 1-inch thick. Cut into 8 wedges and place them on the prepared baking sheet.
Bake for 18-20 minutes, or until golden brown. Let cool slightly before serving.
