Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¼ cup vegan butter cold and cubed
  • 1 cup vegan cheddar cheese shredded
  • ¼ cup chives chopped
  • ¾ cup unsweetened almond milk
  • 1 tablespoon apple cider vinegar

Instructions 

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the flour, baking powder, and salt.
  3. Add the cold, cubed vegan butter to the dry ingredients. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
  4. Stir in the shredded vegan cheddar and chopped chives.
  5. In a small bowl, mix the almond milk and apple cider vinegar. Let it sit for a minute to curdle.
  6. Pour the almond milk mixture into the dry ingredients. Stir until just combined.
  7. Turn the dough out onto a lightly floured surface. Pat it into a circle about 1-inch thick. Cut into 8 wedges and place them on the prepared baking sheet.
  8. Bake for 18-20 minutes, or until golden brown. Let cool slightly before serving.
