Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Bell Pepper, chopped
  • 2 cups Vegetable Broth
  • 1 can Diced Tomatoes
  • 1 can Black Beans, drained and rinsed
  • 1 cup Corn Kernels
  • 1 teaspoon Chili Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped onion and minced garlic. Sauté until softened.
  3. 3. Add chopped bell pepper and cook for another 5 minutes.
  4. 4. Pour in vegetable broth and diced tomatoes. Bring to a boil.
  5. 5. Add black beans, corn, chili powder, ground cumin, salt, and black pepper. Stir well.
  6. 6. Reduce heat and let simmer for 20 minutes.
  7. 7. Serve hot and enjoy!
