Ingredients

  • 1 cup Coconut Milk
  • ½ cup Sugar
  • ¼ cup Cornstarch
  • 1 teaspoon Vanilla Extract

Instructions 

  1. In a saucepan, combine coconut milk and sugar. Heat over medium heat until the sugar is dissolved.
  2. In a mixing bowl, whisk together cornstarch and a small amount of water to make a slurry.
  3. Slowly add the cornstarch slurry to the saucepan, whisking constantly.
  4. Continue to cook, stirring constantly, until the mixture thickens.
  5. Remove from heat and stir in vanilla extract.
  6. Pour the mixture into serving dishes and let cool. Refrigerate until set.
