Coconut Lime Scone Recipe

Scone Ingredients
- 2 cups All-purpose flour
- ½ cup Coconut sugar
- 1 tablespoon Baking powder
- ½ teaspoon Salt
- ½ cup Coconut oil, solid
- ½ cup Coconut milk
- 1 tablespoon Lime zest
- 2 tablespoon Lime juice
- 1 teaspoon Vanilla extract
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the flour, coconut sugar, baking powder, and salt.
Add the solid coconut oil to the dry ingredients and use a pastry cutter to cut it in until the mixture resembles coarse crumbs.
In a separate bowl, mix together the coconut milk, lime zest, lime juice, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Turn the dough out onto a lightly floured surface and shape it into a circle about 1-inch thick. Cut into 8 wedges and place them on the prepared baking sheet.
Bake for 18-20 minutes, or until the scones are golden brown. Let cool slightly before serving.
