Ingredients 

Main Ingredients

  • 1 cup Couscous
  • 1 cup Vegetable broth
  • 1 tablespoon Olive oil
  • 1 Onion, chopped
  • 1 Bell pepper, chopped
  • 1 Zucchini, chopped
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Instructions 

  1. 1. In a saucepan, bring the vegetable broth to a boil.
  2. 2. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes.
  3. 3. In a mixing bowl, combine the chopped onion, bell pepper, and zucchini.
  4. 4. Fluff the couscous with a fork and add it to the vegetables.
  5. 5. Drizzle with olive oil, and season with salt and black pepper. Mix well.
  6. 6. Serve warm or at room temperature.
