Ingredients 

Crust

  • 1.5 cups All-purpose flour
  • 0.5 cup Vegan butter cold
  • 2 tablespoon Sugar
  • 2 tablespoon Cold water

Filling

  • 1 cup Coconut milk full-fat
  • 0.5 cup Sugar
  • 3 tablespoon Cornstarch
  • 1 teaspoon Vanilla extract

Topping

  • 2 cups Mixed fresh fruits sliced

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, and cold vegan butter. Mix until crumbly. Add cold water and mix until dough forms.
  3. Press the dough into a tart pan. Bake for 15 minutes or until golden brown. Let cool.
  4. In a saucepan, combine coconut milk, sugar, cornstarch, and vanilla extract. Cook over medium heat until thickened. Let cool.
  5. Pour the filling into the cooled crust. Top with mixed fresh fruits. Chill in the refrigerator for at least 1 hour before serving.
