- 2 lbs Potatoes cut into 1-inch pieces
- 3 tablespoon Olive Oil
- 4 cloves Garlic minced
- 1 teaspoon Dried Thyme
- 1 teaspoon Dried Rosemary
- 1 teaspoon Salt
- 0.5 teaspoon Black Pepper
Preheat your oven to 425°F (220°C).
In a mixing bowl, combine potatoes, olive oil, garlic, thyme, rosemary, salt, and black pepper. Toss to coat evenly.
Spread the potatoes in a single layer on a baking sheet.
Roast in the preheated oven for 25-30 minutes, or until potatoes are golden brown and crispy, flipping halfway through.
Remove from oven and serve hot.
