Ingredients

  • 2 lbs Potatoes cut into wedges
  • 3 tablespoon Olive Oil
  • 4 cloves Garlic minced
  • ¼ cup Vegan Parmesan Cheese
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 tablespoon Fresh Parsley chopped, for garnish

Instructions 

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the potato wedges, olive oil, minced garlic, salt, and black pepper. Toss to coat the potatoes evenly.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy, flipping halfway through.
  5. Remove from the oven and sprinkle with vegan parmesan cheese and fresh parsley. Serve immediately.
