Instructions
Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine the potato wedges, olive oil, minced garlic, salt, and black pepper. Toss to coat the potatoes evenly.
Spread the potatoes in a single layer on a baking sheet.
Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy, flipping halfway through.
Remove from the oven and sprinkle with vegan parmesan cheese and fresh parsley. Serve immediately.
