Main Ingredients
- 4 carrots, peeled and cut into chunks
- 2 parsnips, peeled and cut into chunks
- 1 sweet potato, peeled and cut into chunks
- 2 tablespoon olive oil
- 2 tablespoon maple syrup
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon dried thyme
Preheat your oven to 400°F (200°C).
In a large bowl, toss the carrots, parsnips, and sweet potato with olive oil, maple syrup, salt, pepper, and thyme.
Spread the vegetables on a baking sheet in a single layer.
Roast for 30 minutes, stirring halfway through, until the vegetables are tender and caramelized.
