  • 4 carrots, peeled and cut into chunks
  • 2 parsnips, peeled and cut into chunks
  • 1 sweet potato, peeled and cut into chunks
  • 2 tablespoon olive oil
  • 2 tablespoon maple syrup
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the carrots, parsnips, and sweet potato with olive oil, maple syrup, salt, pepper, and thyme.
  3. Spread the vegetables on a baking sheet in a single layer.
  4. Roast for 30 minutes, stirring halfway through, until the vegetables are tender and caramelized.
