Grilled Portobello Mushroom Tacos
Delicious vegan tacos with grilled Portobello mushrooms, fresh veggies, and a squeeze of lime.

Main Ingredients
- 4 large Portobello mushrooms
- 2 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 8 small corn tortillas
- 1 cup shredded red cabbage
- 1 avocado sliced
- ¼ cup chopped fresh cilantro
- 1 lime cut into wedges
Preheat grill to medium-high heat.
Remove stems from mushrooms and brush caps with olive oil.
Sprinkle paprika, cumin, salt, and pepper on both sides of mushrooms.
Grill mushrooms for 5 minutes on each side until tender.
Warm tortillas on the grill for about 1 minute per side.
Slice grilled mushrooms and divide among tortillas.
Top with shredded cabbage, avocado slices, and cilantro.
Serve with lime wedges.
