Ingredients 

Main Ingredients

  • 4 large Portobello mushrooms
  • 2 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 cup shredded red cabbage
  • 1 avocado sliced
  • ¼ cup chopped fresh cilantro
  • 1 lime cut into wedges

Instructions 

  1. Preheat grill to medium-high heat.
  2. Remove stems from mushrooms and brush caps with olive oil.
  3. Sprinkle paprika, cumin, salt, and pepper on both sides of mushrooms.
  4. Grill mushrooms for 5 minutes on each side until tender.
  5. Warm tortillas on the grill for about 1 minute per side.
  6. Slice grilled mushrooms and divide among tortillas.
  7. Top with shredded cabbage, avocado slices, and cilantro.
  8. Serve with lime wedges.
