Ingredients 

Main Ingredients

  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup Carrots, diced
  • 1 cup Celery, diced
  • 1 cup Bell Pepper, diced
  • 1 can Diced Tomatoes
  • 4 cups Vegetable Broth
  • 1 cup Frozen Corn
  • 1 cup Frozen Peas
  • 1 cup Cooked Lentils
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add the chopped onion and minced garlic. Cook until softened.
  2. 2. Add the diced carrots, celery, and bell pepper. Cook for about 5 minutes, stirring occasionally.
  3. 3. Pour in the diced tomatoes and vegetable broth. Bring to a boil.
  4. 4. Add the frozen corn, peas, cooked lentils, dried basil, dried oregano, salt, and black pepper. Stir well.
  5. 5. Reduce heat and let it simmer for about 20 minutes, or until the vegetables are tender.
  6. 6. Taste and adjust seasoning if needed. Serve hot.
