Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 6 medium potatoes, peeled and diced
  • 1 cup coconut milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. Set the Instant Pot to sauté mode and add olive oil.
  2. 2. Add diced onion and garlic, sauté until translucent.
  3. 3. Add vegetable broth, diced potatoes, salt, and pepper.
  4. 4. Close the lid and set the Instant Pot to manual high pressure for 10 minutes.
  5. 5. Once done, do a quick release. Open the lid and add coconut milk.
  6. 6. Use an immersion blender to blend the soup until smooth.
  7. 7. Serve hot and enjoy!
