Main Ingredients

  • 1 baguette Baguette sliced lengthwise
  • 0.5 cup Hummus
  • 0.5 cup Roasted Red Peppers sliced
  • 0.5 cup Artichoke Hearts chopped
  • 0.5 cup Cucumber sliced
  • 0.5 cup Red Onion thinly sliced
  • 1 cup Mixed Greens
  • 2 tablespoon Balsamic Vinegar
  • 2 tablespoon Olive Oil
  • Salt and Pepper to taste

Instructions 

  1. Spread hummus on both sides of the baguette.
  2. Layer roasted red peppers, artichoke hearts, cucumber, red onion, and mixed greens.
  3. Drizzle with balsamic vinegar and olive oil.
  4. Season with salt and pepper.
  5. Close the baguette, cut into 4 pieces, and serve.
