Instructions
Heat olive oil in a pan over medium heat. Add diced onion and cook until translucent.
Add minced garlic and cook for another minute.
Add the jackfruit, chili powder, cumin, smoked paprika, salt, and black pepper. Stir well.
Pour in the vegetable broth and simmer for 10-15 minutes, until the jackfruit is tender.
Use a fork to shred the jackfruit into a pulled pork-like consistency.
Warm the corn tortillas in a dry skillet or microwave.
Assemble the tacos by placing the shredded jackfruit on the tortillas and adding your favorite toppings.
