Ingredients 

Main Ingredients

  • 1 can young green jackfruit drained and rinsed
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup vegetable broth
  • 8 small corn tortillas

Toppings

  • diced avocado
  • chopped cilantro
  • lime wedges
  • salsa

Instructions 

  1. Heat olive oil in a pan over medium heat. Add diced onion and cook until translucent.
  2. Add minced garlic and cook for another minute.
  3. Add the jackfruit, chili powder, cumin, smoked paprika, salt, and black pepper. Stir well.
  4. Pour in the vegetable broth and simmer for 10-15 minutes, until the jackfruit is tender.
  5. Use a fork to shred the jackfruit into a pulled pork-like consistency.
  6. Warm the corn tortillas in a dry skillet or microwave.
  7. Assemble the tacos by placing the shredded jackfruit on the tortillas and adding your favorite toppings.
