Ingredients 

Crust

  • 1.5 cups Graham cracker crumbs
  • 0.25 cups Coconut oil, melted

Filling

  • 1 cup Raw cashews, soaked
  • 1 cup Coconut cream
  • 0.5 cup Lime juice
  • 0.5 cup Maple syrup
  • 1 tablespoon Lime zest
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs and melted coconut oil in a bowl. Press into a pie dish to form the crust.
  3. Bake the crust for 10 minutes. Let it cool.
  4. Blend all filling ingredients until smooth. Pour into the cooled crust.
  5. Chill in the fridge for at least 2 hours before serving.
