Ingredients

  • 4 large mushrooms
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup spinach, chopped
  • Salt and pepper to taste

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Clean mushrooms and remove stems.
  3. Heat olive oil in a pan over medium heat.
  4. Sauté onion, garlic, and bell pepper until soft.
  5. Add spinach, salt, and pepper; cook until spinach wilts.
  6. Stuff mushrooms with the mixture.
  7. Bake for 20 minutes or until mushrooms are tender.
