Ingredients 

Main Ingredients

  • ½ cup Aquafaba (liquid from a can of chickpeas)
  • ½ cup Granulated sugar
  • ¼ teaspoon Cream of tartar
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat the aquafaba and cream of tartar with a mixer on high speed until soft peaks form.
  3. Gradually add the sugar, one tablespoon at a time, while continuing to beat until stiff peaks form.
  4. Beat in the vanilla extract.
  5. Spoon or pipe the meringue onto the prepared baking sheet.
  6. Bake for 90 minutes, then turn off the oven and let the meringues cool in the oven for at least an hour.
