Ingredients 

Dough

  • 3 cups All-purpose flour
  • 1 cup Almond milk warmed
  • 2 ¼ teaspoon Active dry yeast
  • ¼ cup Coconut oil melted
  • ¼ cup Sugar
  • ½ teaspoon Salt

Filling

  • ½ cup Brown sugar
  • 2 tablespoon Cinnamon
  • ¼ cup Coconut oil melted

Icing

  • 1 cup Powdered sugar
  • 2 tablespoon Almond milk
  • ½ teaspoon Vanilla extract

Instructions 

  1. In a mixing bowl, combine warm almond milk and yeast. Let sit for 5 minutes.
  2. Add melted coconut oil, sugar, and salt to the yeast mixture. Stir to combine.
  3. Gradually add flour, mixing until a dough forms. Knead for 5-7 minutes.
  4. Place dough in a greased bowl, cover with plastic wrap, and let rise for 1 hour.
  5. Roll out dough on a floured surface into a rectangle. Spread melted coconut oil over dough.
  6. Mix brown sugar and cinnamon, then sprinkle over the dough. Roll up tightly and cut into 12 rolls.
  7. Place rolls in a greased baking dish, cover with plastic wrap, and refrigerate overnight.
  8. Preheat oven to 350°F (175°C). Bake rolls for 25 minutes or until golden brown.
  9. Mix powdered sugar, almond milk, and vanilla extract to make icing. Drizzle over warm rolls.
