Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together the chickpea flour, water, non-dairy milk, olive oil, baking powder, and salt until smooth.
  3. Fold in the chopped vegetables.
  4. Pour the mixture into a greased pie dish.
  5. Bake for 45 minutes or until the top is golden and a toothpick inserted into the center comes out clean.
  6. Let it cool slightly before serving.
