Ingredients 

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 pinch salt
  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ¼ cup red onion finely chopped
  • ¼ cup fresh parsley chopped
  • 1 tablespoon lemon juice freshly squeezed

Instructions 

  1. 1. Rinse the quinoa under cold water using a strainer.
  2. 2. In a saucepan, combine the quinoa, water, and a pinch of salt. Bring to a boil.
  3. 3. Reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed.
  4. 4. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  5. 5. In a mixing bowl, combine the cooked quinoa, olive oil, cherry tomatoes, cucumber, red onion, parsley, and lemon juice. Mix well.
  6. 6. Serve immediately or refrigerate for later.
