Ingredients 

Main Ingredients

  • 4 beets medium-sized, peeled and cut into wedges
  • 2 oranges peeled and sliced
  • 2 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 cup arugula fresh
  • 1 pinch salt to taste
  • 1 pinch black pepper to taste

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Toss the beet wedges with 1 tablespoon of olive oil, salt, and pepper. Spread them out on a baking sheet.
  3. Roast the beets in the oven for about 45 minutes, or until they are tender.
  4. In a mixing bowl, combine the roasted beets, orange slices, arugula, remaining olive oil, and balsamic vinegar. Toss gently to mix.
  5. Season with additional salt and pepper to taste. Serve immediately.
