Ingredients

  • 8 oz soba noodles
  • 1 cup shredded carrots
  • 1 cup sliced bell peppers
  • 1 cup edamame cooked and shelled
  • 2 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon maple syrup
  • 1 teaspoon grated ginger
  • 1 teaspoon sesame seeds
  • 2 stalks green onions sliced

Instructions 

  1. 1. Cook the soba noodles according to package instructions. Drain and rinse under cold water.
  2. 2. In a large mixing bowl, combine the cooked soba noodles, shredded carrots, sliced bell peppers, and edamame.
  3. 3. In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, maple syrup, and grated ginger.
  4. 4. Pour the dressing over the noodle and veggie mixture. Toss to combine.
  5. 5. Garnish with sesame seeds and sliced green onions. Serve immediately or chill for later.
