Ingredients

  • 2 medium Sweet Potatoes peeled and diced
  • 1 can Chickpeas drained and rinsed
  • 1 can Coconut Milk
  • 1 cup Vegetable Broth
  • 1 medium Onion diced
  • 3 cloves Garlic minced
  • 1 tablespoon Curry Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 1 tablespoon Olive Oil

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the diced onion and cook until translucent, about 5 minutes.
  3. 3. Add the minced garlic, curry powder, ground cumin, and ground coriander. Cook for another minute.
  4. 4. Add the diced sweet potatoes, chickpeas, coconut milk, and vegetable broth. Stir to combine.
  5. 5. Bring to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the sweet potatoes are tender.
  6. 6. Season with salt and black pepper to taste.
  7. 7. Serve hot, garnished with fresh cilantro if desired.
