Ingredients 

Main Ingredients

  • 2 medium Sweet Potatoes peeled and diced
  • 1 tablespoon Olive Oil
  • 1 teaspoon Chili Powder
  • ½ teaspoon Cumin
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Salt
  • 8 small Tortillas
  • 1 cup Black Beans cooked
  • 1 cup Corn cooked
  • 1 cup Avocado diced
  • ¼ cup Cilantro chopped
  • 1 unit Lime cut into wedges

Instructions 

  1. Preheat oven to 425°F (220°C).
  2. In a mixing bowl, toss the diced sweet potatoes with olive oil, chili powder, cumin, garlic powder, and salt.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes, or until tender and slightly crispy.
  4. Warm the tortillas in a dry skillet over medium heat.
  5. Assemble the tacos by filling each tortilla with roasted sweet potatoes, black beans, corn, avocado, and cilantro.
  6. Serve with lime wedges on the side.
