Main Ingredients
- 1 cup mashed sweet potato
- 1.5 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- 0.5 teaspoon salt
- 1.5 cups almond milk
- 2 tablespoon maple syrup
- 2 tablespoon coconut oil, melted
- 1 teaspoon vanilla extract
Preheat your waffle iron.
In a large mixing bowl, whisk together the flour, baking powder, cinnamon, and salt.
In another bowl, mix the mashed sweet potato, almond milk, maple syrup, melted coconut oil, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Lightly grease the waffle iron and pour the batter onto the iron. Cook according to the manufacturer's instructions until golden brown and crisp.
