Instructions
Preheat your oven to 375°F (190°C).
In a mixing bowl, whisk together soy sauce, maple syrup, rice vinegar, garlic powder, and ginger powder.
Place the vegan salmon fillets on a baking sheet and brush with the teriyaki sauce.
Bake for 20 minutes, basting with sauce halfway through.
In a small saucepan, bring the remaining sauce to a simmer. Add the cornstarch mixture and cook until thickened.
Serve the baked salmon with the thickened sauce drizzled on top.
