Ingredients 

Main Ingredients

  • 1 cup black beans cooked and mashed
  • 1 cup corn cooked
  • 1 cup vegan cheese shredded
  • 8 pieces corn tortillas
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • to taste salt and pepper

Instructions 

  1. 1. Preheat your air fryer to 375°F (190°C).
  2. 2. In a mixing bowl, combine the mashed black beans, corn, vegan cheese, cumin, paprika, garlic powder, salt, and pepper.
  3. 3. Warm the corn tortillas in a microwave or on a skillet to make them pliable.
  4. 4. Place a spoonful of the filling onto each tortilla and roll them up tightly.
  5. 5. Place the rolled taquitos in the air fryer basket, seam side down. Cook for 8-10 minutes or until crispy and golden brown.
  6. 6. Serve hot with your favorite dipping sauce.
