Preheat your oven to 425°F (220°C).
In a mixing bowl, combine flour and solid coconut oil until the mixture resembles coarse crumbs.
Add ice water, one tablespoon at a time, until the dough comes together.
Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 30 minutes.
In another bowl, mix sliced apples, sugar, flour, cinnamon, nutmeg, and lemon juice.
Roll out one disc of dough and fit it into a pie dish. Add the apple filling.
Roll out the second disc of dough and place it over the filling. Trim and crimp the edges.
Cut slits in the top crust to allow steam to escape.
Bake for 45-60 minutes, until the crust is golden brown and the filling is bubbly.
Let the pie cool before serving.
